KIWANO VEGAN TACOS

What you'll need:

  • 1/2 Enzed Exotics Kiwano
  • 1 cup cooked quinoa

  • 1 cup walnuts— pulse in food processor until walnuts broken up into very small pieces

  • 2 cups cooked lentils (I used green lentils)

  • 1/4 cup onions (cut into small pieces)

  • 2 tbsp extra virgin olive oil

  • 15 oz tomato sauce or passata

  • 1 tbsp chili powder

  • 2 tbsp nutritional yeast

  • Sea salt and pepper to taste

Plant power! Try our vegan tacos recipe for a nutrition-packed main meal, topped with Kiwano for freshness and flavour.

What to do:

Sauté onions in 2 tbsp extra virgin olive oil on medium-low heat for about 4 minutes.

Turn the heat down to low and add the quinoa, walnuts, lentils, tomato sauce/passata, chili powder and sea salt and pepper.

Cook for another 9-10 minutes and stir fairly often. Add 2 tbsp nutritional yeast at the very end, top with Kiwano + your other faves and enjoy!!
